Isomalto-oligosaccharide is made with premium starch under the action of enzyme through processes like liquidation, concentration and drying. It is a new sugar source featured with nutrition, prolonging of energy supply, enhancement of the body's endurance, easy digestion and absorption, low sweetness and low osmotic pressure. The color stability of isomalto-oligosaccharide is more stable than glucose, maltose syrup, corn high-fructose syrup, and it is not easy to brown. Isomalto-oligosaccharide is mainly used making and production of drinks, candies, pastries, dairy products, jams, frozen foods, health foods, etc.
(1)It can be used as the auxiliary material of food candies by replacing maltose. It is a new sugar source.
(2)It is used for producing kinds of syrup products, such as beer syrup, syrup drinks for brewing, oligosaccharide syrup, etc.
(3)It can be added at the late stage of brewing of yellow rice wine to increase the solid, decrease the reducing sugar and improve the taste and quality.
